Overseeing Bar Operations:
- Ensure the bar runs efficiently, with all aspects of service meeting high standards.
- Manage the smooth flow of drink orders, including prioritizing high-demand times, and coordinating with servers and kitchen staff.

Managing a Team of Bartenders:
- Lead and supervise bartenders and bar staff, ensuring they perform their duties effectively.
- Train new bartenders, monitor their progress, and offer feedback for improvement.
- Set performance goals for the team and provide ongoing guidance and motivation.

Customer Service and Engagement:
- Ensure all guests are satisfied with their service, engaging with customers to create a positive, memorable experience.
- Resolve any customer complaints or issues promptly and professionally.
- Create a friendly and welcoming atmosphere to enhance the overall bar experience.

Inventory and Stock Management:
- Monitor bar stock levels and order supplies as needed to prevent shortages.
- Ensure that alcohol, mixers, garnishes, and glassware are well-stocked and organized.
- Implement systems for tracking inventory usage to minimize waste and optimize cost management.

Creating and Updating Drink Menus:
- Develop new drink specials, seasonal menus, or cocktail lists that attract guests and keep the bar offering fresh and exciting.
- Update the menu regularly based on trends, customer preferences, and seasonal availability.

Financial Management:
- Ensure the bar operates within budget, with costs and expenses being tracked and minimized.
- Handle cash management, including opening and closing tills, processing payments, and ensuring that tips are properly distributed.
- Report daily sales and inventory status to management.

Ensuring Compliance with Regulations:
- Ensure that all staff follow safety protocols, including responsible alcohol service, checking IDs, and adhering to health regulations.
- Maintain a clean and safe working environment in the bar, ensuring all safety and hygiene standards are met.
- Monitor the behavior of customers and intervene if necessary to prevent any dangerous or disruptive situations.

Promoting the Bar and Special Events:
- Promote new drinks, special events, or themed nights to attract customers and increase sales.
- Assist in marketing efforts by suggesting promotions or working with social media teams to highlight special offers or events.

Desired candidate profile
As Captain at Carbone, you will assist the Restaurant Assistant Manager providing hands-on support and assistance to colleagues to ensure that the highest levels of service and courtesy are provided to our guests, whilst delivering an exceptional standard of service. You will drive the training needs based on the Carbone sequence of service in relations to the brand standard and have flawless understanding of guest needs and expectations. Captain will provide specialist advice to guests and colleagues and demonstrate deep knowledge of Carbone food and beverage items.
About You
The ideal candidate must have a minimum of 5 years’ experience in hospitality with a minimum 1-2 years’ experience in a Captain or Supervisor role with a proven track record of working within a celebrity branded or brand partner restaurant. The successful candidate must possess excellent communication skills, have experience in working within a fast-paced environment, supervising large diverse teams and can work under pressure.
