Assist the Back of House Manager/Chief Steward that all Health and Safety and Food Safety regulations are adhered to regarding the kitchen areas.
Ensure that the Chefs are provided with an adequate supply of clean utensils and equipment.
Monitor the standards of performance of the kitchen porters and take corrective action when necessary
Assist the Back of House Manager/Chief Steward in ensuring that all shifts are covered
Assist the Back of House Manager/Chief Steward with training and induction of new staff, to enable them to carry out their duties according to standards
Ensure that due diligence sheets are filled out and that standards of cleanliness in all Kitchens and Food & Beverage Back of House areas are checked on a daily basis
Attend Food & Beverage meetings on a regular basis
Carry out any other duties within the food and beverage department which may be required
Control and document all outgoing equipment and ensure the proper receiving upon return
Participate in the quarterly inventory and prepare payroll related documents, prior to their submission to the Department Head.
Prepare the annual vacation related documents / probation period related documents prior to their submission.
Attend all regular Food & Beverage department meetings. and conduct at least one monthly meeting with Stewarding employees to ensure open communication flow amongst the team.
Direct and assist Stewards in order to make clean up more efficient.
Coordinate with the Back of House Manager/Chief Steward in establishing minimum and maximum operating par stocks and supplies and approve storeroom requisition
Work closely with the Chef, Banquets & F&B Managers to anticipate guest needs
Take all necessary actions to reduce breakage of China and Glassware’s.
Ensuring Stewarding staffs have supplies, equipment, tools, and uniforms necessary to do their jobs.
Lead and manage the Stewarding team in all aspects of the department and ensure standards are followed.
Ability to work well under pressure in a fast pace environment.
Ensures disciplinary procedures and documentation are completed according to Standard Operating Procedures
Achieves and exceeds goals including performance goals, budget goals, team goals, etc.
Encourages and builds mutual trust, respect, and cooperation among team members.
Should know administrative work.eg: ordering, roistering and training.
