Maintain regular attendance at department & operations meetings which may vary according to the needs of the hotel.
Ensure strict adherence to all Municipality Health Codes and Standards.
Ensuring Safe & Healthy work environment for all the Guests and the Heartist and a productive operation.
Schedule all stewarding heartist (weekly vacations and ph). Assign/reassign heartist during shift to areas of need. Approve any OT when business levels are high.
Conduct OneonOnes with your heartist in order to understand them better
Closely monitor your leaders delegate & give positive and negative feedback
Conduct daily shift briefing and monthly communication meeting.
Must perform & train on all stewarding duties including health and safety product equipment and behavioral techniques.
Updating all Colleague Logs/ Files and communication board with assistance of his Assistant
Supervise & ensure maintenance and cleanliness of all kitchens and back of the house which includes driveway ramp into basement smoking room and basement driveway.
Ensure all heartist on shift maintain grooming standards
At start of shift do a complete walkthrough of Stewarding areas with the shift supervisor to observe the status of all areas. Make notes of all items that are needed to be done and follow up throughout the shift.
Throughout the shift continuously walk through all areas.
Report all accidents & unsafe areas or machinery.
Work with Culinary Banquets Catering & Outlets to anticipate equipment needs.
Attend daily Catering & Culinary BEO meetings to see what setups are needed to be done on shift.
Ensures proper pass off to other leaders and stewards using a communication logbook.
Ensure MSDS (Material Safety Data Sheet) Binder is updated & compliant.
Maintain the payroll & all other Fairmont Hotels & Resorts standards.
Consistently look for ways to control expenses & improve service.
Strive to achieve your goal of CES assist all other F&B departments achieve their goals through resource support and breakage awareness.
Control breakage waste and spoilage by walking through the areas & watching all F&B heartist work correcting any behavior that is observed.
Order and control of inventory/stocks of all cleaning compounds.
Participate & support the hotels Green Team initiatives.
You will adhere to Hotels Hygiene and HACCP standards and ensure its Standard Operating Procedures and Requirements are fully met.
Liaise with Johnson Diversy & all the other contracts we have for the heart of house.
Attend Dubai Municipality Meetings and actively attend HACCP Committee Meetings and implement HACCP system in the hotel with the Executive Chef/Director of Culinary.
Performs job related duties & special project assigned.
Qualifications :
Should be a PIC Member
Certified in Basic Food Hygiene
Diploma in hotel management is an asset
At least total 810 years in a five star international chain hotel or restaurant
At least two years in an international five star hotel/restaurant in similar position.
Impeccable service standards and attention to detail
Demonstrated ability to lead people and get results together with the team
Ability to effectively solve problems and make decisions in a fast paced highpressure environment.
