What are we looking for

A Commis 2 serving Waldorf Astoria Hotels & Resorts is always working on behalf of our guests and working with other team members. To successfully fill this role you should maintain the attitude behaviors knowledge skills and values that follow:

  • Basic understanding of food preparation kitchen operations and food safety standards.
  • Previous experience in a kitchen ideally in a similar role.
  • Strong communication skills to collaborate effectively with kitchen staff and other departments.
  • Ability to work efficiently and stay calm under pressure particularly during busy service periods.
  • Attention to detail ensuring consistency in taste presentation and quality of all dishes.
  • A passion for learning and a strong desire to improve culinary skills.
  • High school diploma or equivalent preferred; specialized culinary training or qualifications are highly desirable.
  • Physical stamina to stand for extended periods and lift kitchen equipment or supplies as necessary.
  • Excellent knowledge of food hygiene and safety standards ensuring a clean and safe kitchen environment.
  • Flexibility to work various hours including weekends evenings and public holidays as required by the operational needs of the hotel.
  • A positive attitude and a willingness to contribute to a dynamic collaborative team.

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Luxury hospitality experience in a similar role
  • Ability to work a variety of shifts including weekends days afternoons and evenings.

As a Commis 2 you will play a crucial role in ensuring that the culinary operations in the kitchen are efficient organized and in compliance with the highest standards. This position requires you to support the preparation and cooking of dishes maintain hygiene and cleanliness and contribute to the smooth operation of the kitchen.

What will I be doing

This role is crucial in supporting the Senior Chefs to deliver exceptional dishes that exceed guest expectations while maintaining the highest standards of food safety quality and consistency throughout kitchen you will be responsible for performing the following tasks to the highest standards:

  • Assist in the preparation and organization of ingredients for cooking including washing peeling chopping vegetables portioning proteins and other preparatory tasks as directed by Senior Chefs.
  • Follow established recipes and preparation guidelines to ensure consistency in taste presentation and quality of food.
  • Participate in the cooking of basic dishes such as soups sauces salads and other menu items under the guidance of the Chef de Partie or Sous Chef.
  • Maintain an organized and clean workspace ensuring all utensils tools and equipment are in proper working condition.
  • Adhere to hygiene sanitation and food safety regulations including proper handling and storage of ingredients and food items.
  • Assist with receiving checking and storing deliveries ensuring the correct products are received and stored properly.
  • Help maintain inventory levels for your designated section and communicate any stock shortages or needs to the Chef de Partie or Sous Chef.
  • Assist in the preparation of mise en place ensuring that all ingredients and components are ready for service.
  • Participate in minimizing food waste by following proper portion control and stock rotation procedures.
  • Ensure all food items are prepared according to standard recipes ensuring consistency and quality.
  • Assist with the cleaning and upkeep of kitchen equipment and tools ensuring they are ready for use at all times.
  • Work closely with other kitchen staff including Commis 1 Commis 3 and the rest of the team to ensure timely meal preparation.
  • Attend training sessions and kitchen meetings to improve your culinary skills and knowledge.
  • Demonstrate a proactive approach in taking on additional tasks and responsibilities to support kitchen operations.
  • Monitor and maintain a clean safe and hygienic kitchen environment by following all health and safety guidelines.
  • Ensure that perishable items are stored and labeled correctly to prevent spoilage.
  • Prepare requisitions for supplies and food items for your section and assist with the proper handling of food deliveries.
